Cruise Liners to bring 5000 visitors to Cork
FOUR cruise liners will come to Cork this Christmas, including one on Christmas Day, bringing 5,000 visitors to the region. The increase in winter cruise-liners highlights a changing industry. Cork traditionally welcomes cruise-liners into Cobh from April to October, and 58 vessels arrived this year. The larger ocean liners are then redeployed to the Caribbean, the Meditteranean, or to the southern ocean around Australia.

Tourism boost for Donegal
Failte Ireland will be contributing funds to four festivals in Donegal to further promote tourism to the county. The Donegal Rally, the Earagail Arts Festival, the Rory Gallagher Festival in Ballyshannon and the Sea Sessions in Bundoran will all receive a part of the €1.6m funding pot available for festivals and events throughout Ireland.

Mayo to benefit from Arts Council investment
THE Arts Council - the government agency for leading the development of the arts in Ireland - has today announced funding of €314,500 for Mayo in 2017. The Linenhall in Castlebar (€193,500), Ballinglen Arts Foundation (€56,000) in Ballycastle, Ballina Arts Centre (€50,000) and the Achill Heinrich Böll Association (€15,000) are the four local centres and organisations that have been awarded funding by the arts agency.

Lufthansa To Double Services On Its Dublin-Munich Route
Dublin Airport welcomed the announcement from Lufthansa that it is to almost double services on its Dublin-Munich route next summer. The airline, which currently operates a year-round, daily service to Munich will fly 13 times per week from the end of March, 2017.

Dublin Airport Managing Director Vincent Harrison said “Lufthansa is one of our longest serving customers at Dublin Airport and it is particularly pleasing to see the airline almost doubling services on its Munich route next year. This route has gone from strength to strength with the airline increasing its frequency between Dublin and Munich every year since 2011. This increase, which is testament to the popularity of Munich as both a business and leisure destination further strengthens the connection between Ireland and Germany.”

Cork Airport Celebrates Granting Of Norwegian Air US Licence
Cork Airport is celebrating following the long-awaited announcement that the US Department of Transportation has granted a licence to Norwegian Air International to operate the first direct transatlantic flights between Cork and the United States. Norwegian plans to launch with a new Cork-Boston service and is also intending to operate a Cork-New York route subsequently.

Niall MacCarthy, Managing Director at Cork Airport said: “This is momentous news for air travellers on both sides of the Atlantic. It’s great news for Open Skies and for consumer choice and competition. I firmly believe this will permanently transform the transatlantic market in Ireland and further afield for the better. Norwegian will do for transatlantic travel what Ryanair has done for European travel, bringing lower fares, increased competition and growth to the overall market.

Unions clash over future of Bus Éireann's Expressway service
Unions at Bus Éireann are at odds over the future of the company's loss-making Expressway Service. The National Bus & Railworkers' Union (NBRU), which represents most of the drivers, said it could accept some route closures - but SIPTU said it would not. The Expressway service run by the company is losing money and there has been speculation that some of the service may be shut down.

Free parking in Clonmel and Cahir every Saturday during December
Free parking will be available to the public again this year in Clonmel and Cahir every Saturday from 10am during December, says local councillor Martin Lonergan. Locations in Clonmel include Abbey Street (Friary), Mary Street, Gordon Place, Mick Delahunty Square, Kickham Street, Quay Street, Lower Irishtown (Westgate), Suirside (off Old Waterford Road), County Council Car Park and Suir Island, while the Castle Car Park in Cahir will also offer free parking in the run up to Christmas.

STICKY TOFFEE PUDDING

Luscious date pudding soaked in a puddle of warm toffee sauce.
200g dried dates, stones removed
A large mug of tea
1 tsp bread soda
175g self-raising flour
A good pinch of mixed spice
75g of walnuts, roughly chopped
2 large eggs
85g soft butter
140g Demerara sugar
2 tbsp treacle
100ml milk
Toffee sauce
175g Muscovado sugar
A pinch of cinnamon
55g butter
1 tbsp treacle
225ml cream

Preparation method
Preheat an oven to 170 degrees/gas 7. Butter a 20cm (8in) round tin and dust lightly with flour. Simmer the dates with bread soda and tea until they become soft and mushy – about 15-20 minutes. Using a food mixer or electric hand mixer, mix the butter and sugar together until light and creamy. Add the eggs and treacle. Turn the mixer down low and add the flour and mixed spice, then add the walnuts and dates and stir in the milk.
Once the mixture is combined, pour into the prepared tin. Bake in the pre-heated oven for 40-45 minutes; the cake is cooked when a skewer inserted in it comes out clean. Remove from the oven and allow to cool for 20 minutes before turning out. While the cake is cooking, make the sauce. Melt the butter with the cinnamon in a saucepan over a low heat. Add the sugar and treacle and the cream. Bring to the boil and simmer, stirring constantly for two or three minutes until the sauce is caramel in colour. This can be made a day or two in advance, and it freezes beautifully. Serve with whipped cream or vanilla ice cream.
